A new favourite comfort food – Coconut Rice

Comfort food for me has to be warming, flavoursome without being overwhelming, be easy to make and not involve messing about with obscure or difficult ingredients.  I am very happy to have stumbled across a new one which I’m loving from Meera Sodha :

Coconut Rice with Cashews and Shallots

300g Basmai rice

100g Fresh coconut, grated (conveniently you can find snack pots of fresh coconut in supermarkets so there’s no messing about cracking the things just grate)

Ghee/oil/butter

1 tsp mustard seeds (these badboys will pop right out the pan if it’s too hot so go steady or have a lid to hand)

12 curry leaves

1 cinnamon stick

75g cashews

2 cm ginger

1 chilli finely chopped

200g/ 6 shallots, finely sliced

Coconut rice ingredients

No pics of the meal as I was too busy scarfing to bother……

1. Wash rice and then soak for 20 min, replace with fresh water and cook. Drain and cover with a tea towel for 10 min.

2. Stir fry grated coconut on a med heat until it’s starting to colour then tip it on a plate.

3. In the pan you toasted the coconut add some ghee/butter/oil and the spices, when they start making popping noises (and exploding out of the pan) add the shallots, ginger and chilli and cook for approx 10 min until they’ve gone a nice brown, throw in the cashews and cook for another min or two until they’ve coloured.

4. Add rice and coconut and stir thoroughly. Serve.
