Ayan and Family

My friend Ayan came to stay with her kids again this summer and she is one of my favourite houseguests because not only does she cook a tasty meal, but she teaches me to make something too.

Here are two of her easy and delicious Somali curry recipes, because awesome food needs to be shared.

Mung Dahl

1 cup Mung beans

1 tin tomatoes

1 onion

5 garlic

1 bunch coriander

1 tbs curry powder

1 tin coconut  milk

 

1. Blitz tomatoes, garlic and coriander in a food processor.

2. Chop and fry onions then add the tomato sauce and simmer while you boil mung beans in a pan of water until tender.

3. Drain and add the beans and curry powder to the tomato sauce and then simmer for a further 10 minutes.

4. Add coconut milk, gently heat for a minute or two and then serve.

Aubergine and Peanut Curry

My personal favourite, this is ridiculously good.

3 Aubergine

2 Onion

4 cloves garlic

1 tin tomatoes

2 tbsp smooth peanut butter

1. Prick aubergine skins (they will explode otherwise, amusing for the kids less so when it comes to cleaning up) and roast at approx 200′C until you can spear all the way through with a skewer. Leave to cool and the scrape out the flesh inside.

2. Blitz tomato and garlic in the blender

3. Fry onion, add the tomato sauce and simmer for 10-15 min.

4. Add the aubergine to the sauce and cook for 10 min, then stir in the peanut butter before serving.
